However, to get a good night’s sleep, it’s best to avoid stimulants and opt for caffeine-free herbal teas or teas with a low theine content. Which teas don’t disturb sleep? Like coffee, tea contains theine (the same molecule as caffeine), a substance that gives you energy but can also disturb your sleep if consumed after 5pm. How does she do that? By binding to adenosine receptors, the sleep molecule. The result is difficulty falling asleep and less restful sleep. Fortunately, the caffeine in tea is combined with tannins and released much more gradually than when you drink coffee. The stimulating effect is therefore less strong. How do you “remove” the theine from tea? The tea may not be suitable for some people who are very sensitive to theine. But it’s easy to get rid of it by throwing out the first water. Theine is released in the first thirty seconds after infusion. To naturally remove the theine from your tea, you can discard this “first water” and then start the infusion again by pouring water (at the right temperature, of course) over the tea leaves. On the other hand, you will also lose some of the tea’s antioxidants, the substances responsible for its benefits, which are also lost in the first few seconds of brewing!

Lemongrass is an aromatic plant widely used in Southeast Asian cuisine. This plantation was founded in 1980 in Taiwan by Mrs Fu, a woman with the ambition of creating an estate where she could grow and produce high quality teas. She has chosen to use traditional Oolong production methods, including the careful selection of tea leaves, the treading and fermentation process, and ageing in glass jars. Over time, the farm’s reputation grew and it became known for its unique and refined oolong teas. Today, the farm covers 12 hectares and employs over 50 people. Fu Liang Farm Oolong teas are exported to over 30 countries worldwide and have won international awards for their exceptional quality. The farm still uses the same traditional production methods, including the use of local mineral water for fermentation and ageing in glass jars. The tea leaves are carefully selected for size, shape and color before being crushed by hand. The farm is known for its light, smooth and refined teas, which offer a unique taste experience for tea lovers. This tea owes its name to its manufacturing process, a semi-oxidation of the leaves, halfway between green and black tea, which results in a bluish-green color in the cup.
