It owes its name to English Prime Minister Charles Gray, who founded it at the beginning of the 19th century and made it popular in England in the 19th century. However, the idea of adding bergamot oil to black tea came later and is attributed to various stories. One particularly romantic version tells of a Chinese mandarin who served Earl Grey an infusion of black tea and bergamot oil to show his gratitude for saving his life. Whatever the case, Russian Earl Grey tea remains one of the most popular variants of Earl Grey tea. Pour 240 ml of water at 90°C into the cup. Leave to infuse for 4 to 7 minutes for the first infusion and longer for subsequent infusions.
